We love this recipe for tomato & spinach tortellini! It’s quick, comforting and everyone likes it! This recipe is an amazing weeknight meal, especially if you have tortellini in the freezer because you can whip it up in less than 20 minutes.

Tomato & Spinach Tortellini

We always buy the cheese tortellini at Costco, but you can use any kind of tortellini or pasta you want – we’ve even made this recipe with penne noodles in a pinch!

This tomato and spinach tortellini recipe is vegetarian, but you can add cooked ground meat, crumbled sausage or shredded chicken if you want to up the protein.

1 x 250g package of tortellini $2.50
1 cup cream $1.13
2 tablespoons flour $0.01
1 tablespoon olive oil $0.04
3 cloves of garlic, minced $0.12
1 can diced tomatoes $1.49
3 cups of spinach $1.87
¼ cup shredded parmesan cheese $0.43
2 teaspoons dried basil $0.02
1 teaspoon dried oregano $0.07
½ teaspoon thyme $0.02
¼ teaspoon red pepper flakes (optional) $0.02

Tomato & spinach tortellini is the perfect recipe for those busy weeknights where you don't have much time to cook! Only 20 minutes & $1.93 per serving!

Ingredients

  • 1 x 250g package of tortellini
  • 1 cup cream
  • 2 tablespoons flour
  • 1 tablespoon olive oil
  • 3 cloves of garlic, minced
  • 1 can diced tomatoes (796ml)
  • 3 cups of spinach
  • ¼ cup shredded parmesan cheese
  • 2 teaspoons dried basil
  • 1 teaspoon dried oregano
  • ½ teaspoon thyme
  • ¼ teaspoon red pepper flakes (optional)

Instructions

  1. Bring a pot of water to a boil and cook tortellini according to the package.
  2. In a small bowl mix the cream and flour, put aside.
  3. Add the olive oil to a medium skillet over medium-high heat. Cook the minced garlic for 1 minute or until fragrant.
  4. Add the tomatoes, spinach, basil, oregano, thyme and red pepper flakes. Cook until the spinach wilts, stirring occasionally.
  5. Whisk in the flour/cream mixture gradually. Stir in the parmesan. Cook while whisking until sauce has thickened, about 3-5 minutes.
  6. Add the cooked tortellini and toss to combine.
  7. Enjoy!

Notes

You can also use frozen spinach.

We usually cook a big batch to have to rest for leftovers the next day at work!
