Another one of my favs! (will I say every recipe is my fav? Possibly). This one is great because you can cook the chicken inside if the weather is bad, or BBQ it outside for a nice summer meal.
Although I really feel like the rice is the star of the show here, with cheese, veggies and spices it’s a perfect side dish! Actually I’ve eaten just the rice for lunch; anyway onto the recipe.

Ingredients & Cost
4 Chicken thighs or 2 chicken breasts $4 approx
4 tablespoons BBQ sauce (we use sweet baby rays) $0.42
½ onion diced $0.15
½ red pepper $0.75
½ can corn $0.50
½ cup cheddar cheese $0.64
½ cup basmati rice $0.51
1 cube chicken bouillon $0.25
1 teaspoon thyme $0.04
1 teaspoon parsley $0.07

BBQ Chicken & Cheesy Rice
Easy, budget-friendly BBQ chicken with cheesy rice. Made in 30 minutes or less.
Ingredients
- 4 Chicken thighs or 2 Chicken breasts
- 4 Tablespoons BBQ sauce (we use Sweet Baby Rays)
- ½ Onion diced
- ½ Red pepper
- ½ Can corn
- ½ Cup cheddar cheese
- ½ Cup basmati rice
- 1 Cube chicken bouillon
- 1 Teaspoon thyme
- 1 Teaspoon parsley
- 2 Tablespoon oil
Instructions
- Put 1 ⅓ cups water in a medium pot and add the chicken bouillon cube. Cover and bring to a boil.
- Wash and dry all produce, dice the onion and bell pepper into small pieces.
- Add rice to the boiling pot, reduce heat to low and cook with the cover on until rice is tender and the liquid is absorbed, about 12-14 minutes.
- While the rice is cooking, season chicken with salt and pepper, and heat a large non-stick pan over medium heat. Add 1 tablespoon oil and then sear chicken until golden brown 2-3 minutes per side. It does not have to be cooked through.
- Line a baking sheet with foil or parchment and put the seared chicken on the pan. Brush with BBQ sauce until covered completely. Broil on middle rack of the oven until cooked completely to an internal temp of 74C/165F (5-6 minutes, time may vary based on oven).
- In a frying pan, cook veggies in 1 tablespoon oil on medium-high heat until veggies are tender-crisp (3-4 minutes).
- When rice is finished, add rice to the frying pan with the veggies and stir in the thyme, parsley, and cheese. Stir until the cheese is melted.
- Divide rice between plates and top with the BBQ chicken. Enjoy!
